Science of Swine

The science of swine course focuses on the history of swine domestication and breed type, specifically heritage breeds. Students study swine reproduction, nutrition, and general health care and management. They then examine basic swine anatomy and physiology, with a special emphasis on nutrition, including sustainable diets and wild foraging capabilities. They will then be able to connect the swine’s diet to the quality of its meat. Building on this understanding, students will observe the butchering process to gain a clearer sense of the different select cuts. Their final projects give an opportunity to go more in-depth into individual topics of interest. Students then present these final projects to the larger school community at the conclusion of the cycle.
